 250 grams quinoa
2 medium-sized steamed and chopped beetroots
1 ripe chopped avacado
Handful of chopped walnuts
100 grams cream cheese
3 tablespoons chopped green apples
1 tablespoon olive oil
Juice of ¼ lemons
Salt and black pepper according to taste
METHOD

  1. Wash the quinoa thoroughly under a tap in a sieve before putting it in a saucepan with roughly double the quantity of water to quinoa.
  2. Bring it to the boil, then turn the heat down and leave it to simmer gently for 12-15 minutes. At this point most of the water should have been absorbed, so sieve it and keep aside.
  3. Mix beetroot, apples an avocado together in a salad bowl. Add quinoa.
  4. Add cream cheese, olive oil, salt, black pepper, lemon juice and walnuts. Toss lightly and serve chilled.
